Fancy Cowboy Patty Melts

Yesterday my hubby called me around 11:30 and asked when lunch was going to be.. oh, and could his dad come too?  This is pretty commonplace for us… no real schedule, just fly by the seat of your pants.  We like to invite his dad down, too, when Susan (Travis’s mom) is gone to town.  Bill isn’t a real big fan of cooking. 😉

I was going to just whip up a super fast lunch of grilled cheese and tomato soup, but since Bill was coming as well, I thought there better be some BEEF component.  Lucky for him I had about a 1/2 pound of ground beef in my fridge, otherwise he may have had to be a vegetarian for half an hour.

So in 15 or 20 minutes, I had this simple yet scrumptious meal on the table for my men!

Fancy Cowboy Patty Melts

First things first.. make some hamburger patties, salt and pepper both sides,  and get them frying on the grill.  I made mine rather thin because a) I didn’t have very much beef and was on a time crunch; and b)This sandwich is going to be thick enough as it is!

Slice up some veggies, bell peppers, and onions.  Put into a hot skillet with some olive oil and sautee until crisp-tender and they are starting to get a little color on them.

Meanwhile, slice up some cheddar cheese.  This cheese is from Dimock Dairy right here in South Dakota.

Slice up a loaf of sourdough bread.  We get ours from Bountiful Baskets and my oh my! Is it wonderful.

Butter one side of each slice.

Once the veggies you are sautéing are crisp-tender, throw in some fresh spinach and cook until it’s wilted and wonderful.  This won’t take very long at all!

Now for the assembly:  On your hot griddle, place one slice of bread, butter side down.  Top with a couple slices of cheese, a (cooked) hamburger patty and the veggies.

Add another slice of cheese and top with a slice of bread, butter side UP.

Grill until golden and melty and delicious on both sides.

Cut in half and serve alongside a piping hot bowl of tomato soup.

So fancy, so yummy, and so easy!  Perfect for a cold and snowy day!
