English Muffin Pizzas

After our long day in town yesterday, the last thing I wanted to do today was make a big mess cooking an elaborate supper.  Since Travis wasn’t going to be home for supper, I decided that these simple English Muffin Pizzas were the perfect dinner for Miss Millie and I!  They have just a few ingredients, take no time at all to make, and are delicious!

English Muffin Pizzas

Cut two (or more, or less… depending on how many you are feeding!) English muffins in half and set on baking sheet.

Put on 1 – 2 Tablespoons of pizza sauce (why, yes, I did cheat and open a can!).

Top with 4 slices of pepperoni….

…add some grated mozzarella cheese…

… and put in a 375 degree oven for 10-15 minutes, or until the cheese is bubbly and starting to turn golden.

Don’t they look yummy?!  They were.  I ate three.  And I don’t feel at all guilty! 🙂

**NOTE:  You can add any other toppings you like.  We have made these with veggies, chicken, pork… the sky is the limit!

Because these didn’t have any veggies on them, I made Millie and I some tasty smoothies to go alongside.  Bet you can’t guess the hidden ingredient!
