Aunt Sally’s Pancakes

Pancakes aren’t normally my first choice for breakfast, but when Travis’s Aunt Sally gave me this recipe, all of my premonitions about pancakes being “too heavy” for mornings went right out the window!

These pancakes are light and fluffy, which is an impressive feat when you consider that they are made with whole wheat flour and oat bran.  Mr. Handsome, who always says he doesn’t like pancakes at all, raves over these anytime I make them.

Side note: During this pregnancy, it seems I have to make them at least once every other week or more… Baby loves his blueberry pancakes!!

I encourage you wholeheartedly to whip up a batch tomorrow morning.  You will be glad you did.

Aunt Sally’s Pancakes

Whisk together: 2 eggs….

…1 cup whole milk…

…1 cup yogurt (plain or vanilla.. I used vanilla)…

… and 1 tsp. vanilla extract.

Whisk to combine.

In another bowl, mix together 1/2 C. plus 1/8 C. all-purpose flour, 1/2 C. plus 1/8C. whole wheat flour, 1/2 C. oat bran, 1 tsp. baking powder, 1 tsp. baking soda, and 1/2 tsp. salt.

Then submit the bowl to Upper Management for approval.

Gently whisk the dry ingredients into the wet ingredients until smooth.

Butter a hot griddle…

We like to add fresh blueberries onto ours at this point.

Cook until golden brown on both sides, flipping once.  You can tell when they are ready to flip when bubbles consistently appear and pop on the top side of the pancake.  Or you can peek underneath.

Serve piping hot with butter, maple syrup, and always (ALWAYS) bacon.

Aunt Sally’s Pancakes

2 eggs

1 C. milk

1 C. yogurt, plain or vanilla

1 tsp. vanilla

1/2 C. plus 1/8 C. all-purpose flour

1/2 C. plus 1/8 C. whole wheat flour

1/2 C. oat bran

1 tsp. baking powder

1 tsp. baking soda

1/2 tsp. salt

In a medium bowl, whisk together wet ingredients.  In another bowl, whisk together dry ingredients.  Gently whisk dry ingredients gradually into wet ingredients until smooth.  Butter a hot griddle and pour 1/2 C. batter per pancake on top.  Add blueberries now if desired.  Cook until golden brown on both sides.
